How long does it take to smoke a brisket?
A full packer brisket takes about 60-90 minutes per pound at 250°F. A 12-pound brisket will take roughly 12-18 hours. Always cook to internal temperature (203°F), not time alone.
What is the stall when smoking meat?
The stall occurs when the internal temperature plateaus around 150-170°F. This is caused by evaporative cooling. You can wrap the meat in foil or butcher paper (the Texas Crutch) to push through the stall faster.
What temperature should I smoke pork shoulder?
